Ingredients
- 8 handfuls arugula
- 1 red onion, thinly sliced
- 6 ripe yellow peaches, sliced
- 4 chicken breasts
- 2 burrata balls, torn
- ½ cup Smash Kitchen American Style BBQ Sauce
- Smash Kitchen Golden Vinaigrette
- Olive oil
- Salt & pepper, to taste
Instructions
- Lightly drizzle peach slices with olive oil. Place on the grill until golden brown and slightly charred.
- Season chicken breasts with salt and pepper, then drizzle with olive oil. Grill until nearly cooked through. Right before pulling, brush both sides with Smash Kitchen American Style BBQ Sauce. Grill 1–2 minutes more until glazed and fully cooked.
- Assemble the salad. On a large serving platter, layer arugula, red onion, grilled peaches, sliced BBQ chicken, and torn burrata.
- Drizzle the vinaigrette over the top and serve immediately.
