Orange Olive Oil Cake
During the holidays, everyone needs a dessert that’s simple yet impressive. This Orange Olive Oil Cake takes the (literal) cake. Using olive oil keeps the crumb incredibly moist, even when left out at room temperature, while adding a richness that pairs perfectly with orange zest. It’s one of those rare desserts that’s just as good fresh from the oven as it is the next day, warmed up with a cup of coffee. Ingredients
- ½ cup Smash Kitchen Classic Extra-Virgin Olive Oil
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 cup buttermilk
- 1 tbsp vanilla extract
- 2 tbsp fresh orange juice
- Zest of 1 orange
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt

Instructions
- Preheat the oven to 350F.
- In a large bowl, whisk together the Smash Kitchen Classic Extra-Virgin Olive Oil, sugar, eggs, buttermilk, vanilla extract, orange juice and zest until smooth and well-combined.
- In a separate bowl, mix together the dry ingredients. Then, add your dry ingredients to the wet and gently whisk just to combine.
- Grease the cake pan lightly with Smash Kitchen Extra-Virgin Olive Oil Spray, add a piece of parchment at the bottom, then pour in the batter and bake for 35-40 minutes.
- Serve immediately with a scoop of Van Leeuwen Vanilla Bean French Ice Cream, extra orange zest for garnish, and a drizzle of Smash Kitchen Robust Olive Oil.
