Thanksgiving Breakfast Sandwich
Every family has their own post-Thanksgiving traditions. For the Powells, it starts with this Thanksgiving Breakfast Sandwich. Cyndy Powell (aka Glen’s mom) lays out all the leftovers from the night before: turkey, stuffing, sauces, you name it. All of the cousins and grandkids gather around the table to build their own breakfast sandwich, piling on whatever they love most. Now, it’s your turn to try it at home!

Ingredients
- 1 English muffin
- Smash Kitchen Avocado Oil Spray
- 3–4 tbsp Smash Kitchen Cranberry Mayo
- 2 slices leftover turkey
- ¼ cup warmed stuffing
- 1 fried egg
- Small handful of spinach
- 1 tbsp cranberry sauce
Instructions
- Lightly spray a pan with Smash Kitchen Avocado Oil Spray. Toast both halves of the English muffin over medium heat until golden brown.
- Spread a generous layer of Cranberry Mayo on both toasted muffin halves.
- Build your sandwich: layer on the turkey, warm stuffing, spinach, fried egg, a little more Cranberry Mayo, and a spoonful of cranberry sauce.
- Cap it with the top muffin half. Enjoy immediately while warm.
