Spicy Mayo Shrimp Roll

Ingredients
- 6 Gulf-head shrimp
- 2 tsp kosher salt
- 2 tbsp neutral oil
- 2 brioche rolls
- ½ cup shredded lettuce
- Handful of cilantro
- 2 tbsp Smash Kitchen Spicy Mayonnaise
- Zest of 1 lime
- Juice of ½ lime
- 1 sliced green onion
- Optional: Chopped chives, Aleppo chili flakes, ½ avocado
- Smash Kitchen Hot Honey Ketchup, for serving
Instructions
- Heat a cast iron skillet over medium heat and add the neutral oil. Season the shrimp with salt on both sides, then pan-fry until pink and cooked through, about 2–3 minutes per side.
- Transfer the shrimp to a plate to cool, then chop into large chunks.
- In a mixing bowl, combine the chopped shrimp with Smash Kitchen Spicy Mayonnaise, lime zest, lime juice, sliced green onion, and salt to taste. Mix well.
- In the same skillet, toast the brioche rolls until golden on both sides.
- To assemble: layer the shredded lettuce and cilantro in each roll, then spoon on the spicy mayo shrimp mixture. Top with optional chives, avocado slices, and a sprinkle of Aleppo chili flakes. Add a lime wedge on the side, if desired.
- Serve with fries and a side of Smash Kitchen Hot Honey Ketchup.
