Ingredients

(Dressing)

  • 3 anchovies, minced
  • 2 tsp minced garlic 
  • Salt and pepper to taste 
  • Juice of 1 lemon 
  • 1 tbsp Smash Kitchen Dijon Mustard 
  • ¼ cup Smash Kitchen Spicy Mayonnaise 
  • ¼ cup grated parmesan cheese
  • 3 tbsp olive oil 

(Salad Wrap)

  • 4 cups chopped romaine lettuce 
  • ¼ cup croutons 
  • ¼ cup chopped chicken, cooked
  • ¼ cup shaved parmesan cheese
  • 2-4 soaked rice paper wraps
Instructions
  1. (Dressing) In a bowl, whisk together anchovies, garlic, lemon juice, Dijon, Spicy Mayonnaise, parmesan, and olive oil until smooth. Season with salt and pepper to taste.
  2. (Salad Wrap) In a large bowl, combine romaine, chicken, croutons, and shaved parmesan. Drizzle with the Caesar dressing and toss until evenly coated.
  3. Dip each rice paper wrap in warm water for 5–10 seconds until pliable, then lay flat on a clean surface.
  4. Place a portion of the Caesar salad in the center of each wrap. Fold the sides in, then roll tightly like a burrito.
  5. Slice in half if desired and enjoy immediately.
