Ingredients
  • 1 cup macaroni noodles
  • 1½ cups reserved pasta water
  • 2 cups shredded cheddar cheese
  • 2 tbsp cottage cheese
  • 1 tbsp Smash Kitchen Dijon Mustard
  • Salt, to taste
  • Smash Kitchen Classic Tomato Ketchup
Instructions
  1. Boil macaroni noodles until al dente. Reserve 1½ cups of pasta water, then drain and set noodles aside.
  2. In a large saucepan over medium-low heat, whisk together shredded cheddar and pasta water until melted and smooth.
  3. Stir in cottage cheese, Smash Kitchen Dijon, and salt. Add cooked noodles and mix until fully coated.
  4. Let cool slightly before adding to a lunch container.
  5. Optional (but highly recommended): serve with a drizzle of ketchup on top!
