Easiest Olive Oil Turkey

Ingredients
  • 1 whole turkey (12–14 lbs), thawed
  • 3 tbsp kosher salt
  • 2 tbsp brown sugar
  • 1 tbsp black pepper
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tbsp chopped sage
  • ¼ cup Smash Kitchen Classic Extra-Virgin Olive Oil (for roasting)
  • 1 cup chicken stock (for roasting pan)
Instructions
  1. Mix together salt, sugar, pepper, and herbs in a small bowl.
  2. Pat the turkey dry with paper towels. 
  3. Rub the dry brine mixture all over the turkey. Place the turkey on a rack set over a baking sheet and refrigerate uncovered for 24–48 hours.
  4. After 24 hours, remove the turkey from the fridge discarding any liquid that’s collected onto the baking sheet. 
  5. Preheat the oven to 350°F. Generously drizzle Smash Kitchen Classic Extra-Virgin Olive Oil all over the turkey.
  6. Bake for 2 hours. Roast for 30 minutes. 
  7. Cook until the internal temperature reaches 165°F in the thickest part of the thigh. 
  8. Let the turkey rest for 20-30 minutes before carving. Finish with a drizzle of olive oil.
