Simple Herby Pasta Salad
This Simple Herby Pasta Salad is your new go-to BBQ side. Tossed in a bright, zingy dijon dressing (we doubled it so you can sauce to your liking), it’s packed with juicy tomatoes, crisp cucumbers, and chopped salami. Hearty enough to eat on its own, but even better next to smoky ribs or grilled chicken. Fresh, crunchy, and made to get better with time.

Ingredients
(Dressing)
- 3 tbsp Smash Kitchen Dijon Mustard
- 2 tsp honey
- ¼ cup red wine vinegar
- ½ cup olive oil
- 1 cloves garlic, minced
- 1 tsp dried crushed oregano
- Salt and pepper to taste
(Salad)
- 8 oz cooked pasta
- ½ red onion, diced
- ½ cup chopped salami
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ⅓ cup banana peppers, chopped
- ¼ cup chopped parsley
- 6 fresh basil leaves, chopped
- ¼ cup grated Parmesan
Instructions
- Whisk together the Smash Kitchen Dijon Mustard, honey, vinegar, olive oil, oregano, garlic, salt, and pepper until well combined.
- In a large mixing bowl, add the diced red onion and pour the dressing over it. Let it sit while you prep the rest of the ingredients to mellow the onion’s flavor.
- Add the artichoke hearts, cucumber, salami, cherry tomatoes, parsley, basil, banana peppers, Parmesan, and pasta. Toss until everything is evenly coated.
- Refrigerate for at least 20 minutes or until ready to serve.
