Ingredients
- 10 Roma tomatoes, halved
- ½ white onion
- 1 garlic clove, halved
- 1 bunch fresh basil
- ½ cup Smash Kitchen Everyday Extra Virgin Olive Oil
- Salt & black pepper, to taste
- 1 cup chicken broth
- ¼ cup heavy whipping cream

- Serve alongside grilled cheese
Instructions
- Preheat your oven to 425°F. Add tomatoes, onion, garlic, and basil to a deep baking dish. Drizzle generously with Smash Kitchen Everyday Extra Virgin Olive Oil and season with salt and pepper.
- Cover with foil and roast for 40–50 minutes, until tomatoes are jammy and garlic is soft and fragrant.
- Transfer everything to a large pot. Add cream and broth, then blend with an immersion blender until smooth.
