Ingredients
(For the latkes)
- 3 large russet potatoes, peeled
- 1 small yellow onion
- 2 large eggs
- ⅓ cup all-purpose flour
- Salt and pepper to taste
- Smash Kitchen Avocado Oil (for frying)
(For the dip)
- ½ cup sour cream
- 2 tbsp Smash Kitchen Spicy Mayonnaise
- Fresh chives (for garnish)
Instructions
- Grate the potatoes and onion on the large holes of a box grater. Place mixture in a clean kitchen towel and squeeze out all of the moisture.
- Transfer the grated potatoes and onions to a bowl. Add eggs, flour, salt and pepper. Stir until fully combined.
- Fill a deep skillet with about ½ inch of Smash Kitchen Avocado Oil. Heat over medium-high until shimmering.
- Scoop 2 tablespoons of the potato mixture into the hot oil, flattening gently with a spatula. Fry 3 minutes per side, until golden brown and crispy.
- Transfer to a wire rack. Sprinkle it with salt while it's hot.
- For the dip, mix the sour cream and Smash Kitchen Spicy Mayonnaise until smooth.
- Enjoy the latkes immediately with the Spicy Mayo Sour Cream Dip. Top with chives.
