Kentucky Derby Benedictine Dip

A cool, creamy Louisville original from the early 1900s, Benedictine is a Derby Day classic. While the original recipes called for a splash of green dye, we skip that and keep it fresh with pureed cucumber, Smash Kitchen Real Mayonnaise, and a sprinkle of dill for an herby twist on this Southern favorite.

Ingredients
  • 1 large cucumber
  • ¼ cup white onion
  • 8 oz cream cheese, softened
  • ¼ cup sour cream
  • 2 tbsp Smash Kitchen Real Mayonnaise
  • Salt and pepper to taste
  • Fresh dill, for garnish
Instructions
  1. Cut the cucumber and onion into large chunks. Place in a blender or food processor and pulse until just broken down.
  2. Strain the mixture through a fine mesh sieve or cheesecloth to remove excess liquid.
  3. In a mixing bowl, combine the cream cheese, sour cream, Smash Kitchen Real Mayonnaise, and the strained cucumber-onion mixture. Season with salt and pepper to taste.
  4. Chill before serving. Top with fresh dill and enjoy with potato chips, veggie sticks, or spread on soft white bread for a true Kentucky classic.
