Cranberry Mayo Deviled Eggs

Ingredients
  • 6 Vital Farms Pasture-Raised eggs
  • 3 tbsp Smash Kitchen Cranberry Mayo
  • 1 tsp Smash Kitchen Dijon Mustard
  • Juice of ½ a lemon 
  • Salt and pepper, to taste
  • (Optional) Dill, paprika, lemon zest, flakey salt for garnish
Instructions
  1. Place eggs in a single layer in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, remove from heat, cover, and let sit for 10 minutes.
  3. Drain and cool eggs, then peel. Slice eggs in half lengthwise and remove yolks to a small bowl.
  4. Mash yolks with a fork until smooth, then stir in Smash Kitchen Cranberry Mayo, Dijon Mustard, lemon juice, salt, and pepper until creamy.
  5. Spoon or pipe the filling back into the egg whites.
  6. Dust lightly with paprika, lemon zest, flakey salt and pepper for garnish (optionally some dill for color)
